Red Wattle was the pork prized by chefs in New Orleans in America's early years for it's bold, concentrated flavor. Described as earthy, sweet, buttery, creamy, floral, tart, spicy, vegetal, minerally, spicy, beefy and herbaceous with a hint of cinnamon. That's a lot of flavor! With a deeper red color than modern pork, Red Wattle has a high fat marbling throughout the meat which gives it a richer, deeper flavor and decreases the need to use oil, shortening, butter or unnatural fats.
American Heritage Farm is one of the few producers and sellers of this exceptional pork in the mid-Michigan area. We offer farm fresh, USDA certified individual cuts at a decent price.
We have no doubt that you'll find the taste of the Red Wattle to be nothing like the "bargain" pork you can get at the grocery store. We hope you'll try some today. Your taste buds (and health) will thank you!
